Beef Kaldereta

Beef Kaldereta.

Another favorite Filipino dish is the Kaldereta. It is a hearty meat dish using chevon (goat meat), beef, or pork combined with potatoes, carrots, tomato sauce, and liver spread or liver paste. This is a popular dish served during special occasions and a regular in every Filipino cookbook. Preparing something like this takes some time and patience but it is all worth the wait. Using a pressure cooker is recommended to save some time in making the meat tender.

3 lbs beef short ribs
ground pepper or 1 chili pepper
1/4 cup garlic,chopped
1/4 cup oliv e oil
1/2 cup onion chopped
2 bay leaves
1/4 soy sauce
3 tbsp lemon juice
1 can tomato paste
3 potatoes quartered
fish sauce to taste
sweet bell pepper,sliced
star anise (optional)

Cooking preparation:

First, marinate the beef with soy sauce, garlic, onions, pepper, and lemon

Drain beef and set garlic and onion aside for now.
Heat 1/2 of the oil and brown the ribs

Set aside

Saute garlic and onion  and then the browned beef

Add in  tomato paste,stock,bay leaves,red pepper,
and salt to taste and simmer for at least 1 1/2 hour
or until the beef is tender.
Add in potato, and continue cooking until tender and sauce thickens

You may add peas and olives lastly

Serve with rice

    garlic, onion,fresh tomato, tomato sauce, beef, coconut milk, potato, carrot, green & red bell pepper, pickels, peanut butter, liver spread, cheese.
    1. In a cooking pan, saute the garlic, a bit onion, and fresh tomato.
    2. add the beef and let it simmer until it get soft/cooked.
    3. add the coconut milk then stir.
    4. add the potato, carrot, red & green bell pepper. u can add pickels if u like.
    5. add the peanut butter, liver spread and lastly the cheese then stir/mix well.
